Ingredients

  • 2 cups sugar
  • 1 cup water
  • 1/4 cup cornstarch
  • 1 tbsp lemon juice
  • 1 tsp rosewater
  • 1 cup sugar (for mastic candy)
  • 1/4 cup water (for mastic candy)
  • 1/2 tsp mastic resin, crushed
  • 1 tsp lemon juice (for mastic candy)

Instructions

  1. For loukoumi: Dissolve sugar in water over medium heat. Stir until boiling.
  2. Add lemon juice, reduce heat, and simmer for 15 minutes.
  3. Mix cornstarch with water to form a paste, then stir it into the syrup until thickened.
  4. Remove from heat, add rosewater, and pour into greased 8×8 pan. Let set for 4 hours.
  5. Cut into squares and dust with powdered sugar.
  6. For mastic candy: Combine sugar, water, and lemon juice in a saucepan over medium heat. Stir until sugar dissolves.
  7. Add mastic resin and boil until it reaches 240°F.
  8. Pour into a greased mold or tray, cool for 30 minutes, then break into pieces.
