Thai Feast

Seeing so many Thai recipes here on Orble, and elsewhere, I was inspired to try some Thai recipes. The problem is, there are no Asian markets near me, and many of the ingredients are hard to find - especially things like lemongrass, galangal, and kaffir lime leaves.
I decided to try to find acceptable substitutes, and to find out more about what a typical Thai meal would be (you know, if you were eating at home in Thailand).
I found that for galangal it is ok to substitute ginger and a little lemon juice. For lemon grass, lemon juice and some lemon zest will add similar flavor, and lime juice and zest will provide a similar flavor to the kaffir lime leaves.
I read that Thai cuisine usually consists of Jasmine rice, and several other dishes - some hot and spicy, some sweet, some fried, etc. I actually found a box mix for the Jasmine rice - it already had the flavorings added, so that was easy. I chose six other dishes to try: hot & sour shrimp soup, crab fried rice, red beef curry, ginger & chicken stirfry, and spicy ground pork salad. We also had grilled pineapple and mango slices for dessert.
This Thai feast was AWESOME! My family loved it. I guess I'll have to try more Thai recipes to try now. The recipes above - with my adaptations - can be found at Real Home Cooking.
