Rosemary Chicken
June 25th 2009 18:47
I've been experimenting with different herbs and spices lately. Rosemary has become one of my new favorites! Here's my recipe for Rosemary Chicken.
6 boneless, skinless chicken breasts
1 clove garlic, minced
1 onion, thinly sliced
1 tablespoon rosemary leaves (dried or fresh)
2 tablespoons extra-virgin olive oil
Pour olive oil into a 13X9 baking dish and coat chicken (both sides) with the oil. Rub the rosemary on the chicken and place in baking dish. Top with the garlic and onion. Cover with aluminum foil and bake at 350 degrees for about 30 minutes. Remove foil and bake an additional 15 minutes.
This is a really tasty and quick to fix recipe. It is also good with a little paprika added, or a squirt of lemon juice.
Happy cooking!
