Impress the Girl - menu

My son is in college, and likes to cook for his dates. Problem is, he doesn't REALLY cook. He opens canned vegetables, and heats them in the microwave. He knows how to cook a few meat dishes, but still - doesn't really follow a recipe. So, he asked me to come up with a couple of really SIMPLE recipes that would be impressive to his dates. Mom and I brainstormed a bit, and this is the first one we came up with.

Impress The Girl

Fancy Salad

Because the entree has two green veggies with it, we don't really need to have a green salad. We're just going to cut some tomato wedges, and place them around the edge of a salad plate. In the center, we'll put marinated artichoke hearts. Really simple; looks elegant; tastes good.


Tilapia Packets with Baby Spinach and Asparagus

This recipe comes from my mom - don't know where she got it (or I'd give proper credit.)

For each serving, you need 1 nice size tilapia filet, a bunch of baby spinach and some fresh asparagus (cut in bite size pieces).

Lay a piece of foil on a baking sheet. Pile a bunch of baby spinach in the center of the foil. Drizzle with extra virgin olive oil, salt and pepper. Lay the tilapia filet on top. Again, drizzle with EVOO and S&P. Pile the asparagus on top of that - drizzle again. Fold the foil over and seal up to make a packet. Bake at 375 F for about 15-20 minutes. Transfer to a nice plate, and serve with long grain wild rice.

Cherry Chiffon Dessert

OK - I know I was complaining about using canned veggies, but we are using CANS for this dish. It's really simple, and tastes wonderful. We normally just make this in a large bowl, and then serve from the bowl. But - we're trying to impress a girl, here, so we'll use pretty glasses to serve. Brandy snifters or sundae glasses. Even wine glasses will work.




1 can cherry pie filling - chilled
1 can pineapple chunks or tidbits - chilled and drained
1 can sweetened condensed milk
1 - 8 oz tub frozen whipped topping - thawed
1 cup miniature marshmallows

Mix all together, fill serving dishes, chill.

Super simple meal to impress the girl! All of it can be made ahead, except for cooking the fish packets. Those can be made up ahead, and put in the oven 20 minutes before you'll be ready to serve.

Sausage Stuffing Balls

OMG! These are soooooo delicious!

My husband saw something about these on one of the cooking shows he likes to watch. He couldn't remember the details, or even which show it was on (so I can't give any credit) but he remembered the basic recipe.

Fry up some sausage, add stuffing mix and some liquid. Roll into balls, coat with beaten egg, then fine bread crumbs. Fry until golden brown, and enjoy!

This is what I did:

1 # regular breakfast sausage
1 # Italian sausage
1 # ground pork
Large package stuffing mix
2 cups water
1/2 cup milk
3 eggs - beaten
Bread crumbs (about 8 slices bread in the food processor)

Mix/crumble all the meat togeter and cook until well browned. Pour stuffing mix into large mixing bowl. Add meat and liquid. Roll into balls - just smaller than baseball size. Coat with egg, then roll in bread crumbs. Fry in deep fryer just long enough to brown. (About 1 to 1-1/2 minutes) - I did three balls at a time.

I also used the drippings from the meat to make a brown gravy. These were absolutely delicous!

Hubby said I need to use spicy sausage and add chopped green onion next time, but I think they were perfect just as they were!

What's for Brunch?

Bacon and Egg Enchiladas --- yummmmmm!

This one comes from Betty Crocker, and looks like just what I want to serve for brunch one day next week, while the kids are all home for Christmas break.

Yummmm! What a delicious way to start the day.
Just as I haven't had much free time to write for my blogs lately, I also haven't had free time for looking at other recipe sites. But I just had to find something to feed the kids while they're home. This one was delivered to my inbox - an answered prayer!

Breakfast burritos are one of my favorites, but this looks even better. Might not make it for fast food, but for brunch it really seems to fit the bill. Eggs, bacon, and cheese wrapped in corn tortillas. Topped with enchilada sauce, cheese, and a bit more bacon. My mouth is watering!

What to do with leftovers...

I always have leftovers. Not because my cooking is bad, but because I always cook too much! Since my oldest son moved out, and my husband and I have been trying to eat better (meaning less) I just haven't adjusted my "usual" amounts to reflect the fewer servings yet.

But what do you do with leftovers? My family doesn't usually like to eat leftovers, unless I turn them into something else. I had leftover roasted pork loin, and leftover BBQ'd ribeyes (not everyone showed up to eat that night). There was also half a bag of shrimp thawed(the frozen kind that's already cooked). I didn't want the good meat to go to waste, but I knew it wouldn't get eaten if I didn't turn it into a completely different meal. I was in the mood for something Asian, so I did some Chinese style dishes
