Stuffed Chicken Breasts

Stuffed Chicken Breasts

4 skinless, boneless chicken breasts
10 oz pkg frozen spinach, thawed and drained or enough fresh to make 1 c cooked
1/4 c Parmesan cheese
1/2 c mozzarella cheese
oregano
salt
pepper
1 bag baby carrots
1 c chicken broth

Blend the cheese, herbs and spinach in a bowl. Make a deep slit in each breast and pack it with stuffing. Sauté the chicken breast on each side for 3 minutes. Put in a 9 x 13 greased pan. pour broth over top. Sprinkle in the carrots and season with salt and pepper if desired. Cook at 350 for 30 to 45 minutes or until juices run clear.
