Fall Baking: Apple Cheesecake

Ingredients:
CRUST
1/4 cup melted butter
1 cup graham cracker crumbs
3 tablespoons white sugar
1/2 cup finely chopped pecans
1/2 teaspoon ground cinnamon
FILLING
2 8 oz pkgs softened cream cheese
1/2 cup sugar
2 eggs
1/2 teaspoon vanilla
TOPPING
1/3 cup sugar
1/2 teaspoon cinnamon
1/4 cup chopped pecans
4 cups thinly sliced and peeled baking apples
Directions:
In a large bowl, stir together the graham cracker crumbs, 1/2 cup finely chopped pecans, 3 tablespoons sugar, 1/2 teaspoon cinnamon and melted butter. Mix nd press firmly in to the bottom of a springform pan. Bake for 10 minutes at 350 degrees. Remove and cool.
In another bowl, mix cream cheese and 1/2 cup sugar. Mix at medium speed until smooth and fluffy. Beat in eggs one at a time, mixing well after each one. Slowly add vanilla pour in to crust.
In a small bowl, mix remaining 1/3 cup sugar and 1/2 teaspoon cinnamon. Toss the cinnamon-sugar until the apples are coated. Gently place by spoonfuls over cream cheese mixture. Sprinkle crushed pecans on top and place in the oven. Bake at 350 degrees for 60 to 70 minutes. Gently loosen cake from pan and cool before removing completely. Refrigerate before serving.
